Parrish Fire District Creole Shrimp and Grits - Serves 8 By John Rankin, Rescue Lieutenant, Hillsborough County Fire Rescue Ingredients 4 cups water 2 cans evaporated milk 2 cans cream corn 1 pound country smoked sausage, diced 1 medium yellow or Spanish onion, diced 1 jalapeno, diced 1 bunch green onions, sliced divided green and white 2 cups yellow grits 2 pounds raw shrimp 1/2 cup blackening powder (Paul Prudhomme's recommended) 8 ounces cheddar cheese, grated. Plus more for garnish on top of bowls 1 stick of butter, halved Season salt and pepper to taste 1. Preheat a 2 qt saucepan over medium high heat. Melt 1/2 stick of the butter in the pan. Add the sausage, yellow onion, the white part from the green onions, and jalapeno to the pan. Sauté on medium high heat until the onions are translucent, and the pepper has softened. Add salt and pepper to taste. 2. Next add water, evaporated milk, and cream corn to the pot and bring to a boil, stirring occasionally. While the pan is coming to a boil preheat a sauté pan on med high heat. Once the liquid has come to a boil add the grits, whisking constantly to prevent lumps. Reduce heat to medium low and cook the grits for 10 minutes more, stirring frequently. Taste and adjust the seasoning. After 10 minutes, add the 8 oz. of cheese and stir to combine. Once the cheese has melted, it’s done. Turn off the heat. 3. Add the shrimp and blackened seasoning together in a bowl. Stir/toss to coat. Add the butter to the sauté pan and once the butter has melted add the shrimp and let them sit for a couple of minutes without moving the shrimp. Flip the shrimp and let them cook for another couple of minutes without disturbing them. You will see the shrimp change from translucent to white; turn the heat off the sauté pan. 4. Ladle the grits into a bowl. Top with the desired amount of shrimp. Garish the top with shredded cheese and the green onions. *Please note ESLI classes are all full
